It only has two small windows, a doorway and a fire in the central hearth to illuminate it and with public in the room the light level is such that any serious food preparation has to be done on a table just by the window. The dark line you see to the right of the cook is a dangle spit hold a small piece of lamb over a pot that catches the juices.
