This picture shows the size of the galley. You can see the extent of the heat cone from the entrance to the fire-box by looking at the soot marks above the entrance.
The firebox has no flu; therefore all the excess heat comes out the front and we can then roast upon this convected heat.
We are not sure that the cook did this, however it is a simple and practical technique which they used in other contexts.Photographer: Mark Goodman
